Egg Pudding Recipe

Egg pudding is a popular taiwanese topping for milk tea. This egg pudding recipe is sweet and light that will add richness to your milk tea.

Ingredients

  • 1 cup whole milk
  • 1 teaspoon gelatin powder
  • 1/4 cup of water
  • 2 tablespoons granulated sugar
  • 3 egg yolks
  • 1/2 teaspoon vanilla

Instructions

  1. In a small bowl, Add the gelatin to the water and let it bloom. Set aside.
  2. In another bowl, Mix egg yolks and sugar then set aside.
  3. Over medium to low heat, Heat up the milk. Make sure not to bring it to boil or simmer.
  4. Turn off the heat and add 1/2 cup of the milk gradually into the egg-sugar mixture just until blended.
  5. Put the mixture back to the pot with the remaining milk.
  6. Turn back the heat to low-medium, Gently whisk mixture constantly without creating lots of foam. Stir for about 2-3 minutes.
  7. Turn of the heat, Add the gelatin-water mixture to the milk-egg-sugar mixture and whisk until well blended.

  8. Pour the mixture into a container with a lid and chill for at least 4 hours.
  9. Scoop a flat chunks of the egg pudding and top it in your milk tea. Serve cold.
