Ingredients

  • 1 lb pork belly sliced 1/2-inch thick
  • 1 tablespoon vegetable oil
  • 8 garlic cloves sliced thinly
  • 2 teaspoon minced ginger
  • 10 long chili green peppers remove the seeds and cut into 1-inch pieces
  • 10 whole dried red chili peppers
  • 1 scallion cut into 1-inch pieces
  • 1 teaspoon whole peppercorn or 1/4 teaspoon ground pepper
  • 1 tablespoon chili paste
  • 3/4 teaspoon salt
  • 1 tablespoon liquid seasoning
  • 1 1/2 teaspoon sugar
  • 2 tablespoon shaoxing wine

Instructions

  1. Heat oil in a wok or wide pan over high heat.
  2. Add the pork belly and stir fry for few seconds then turn down the heat to medium and cook the pork belly until a bit crispy and browned. Remove from pan and set aside.

  3. In the same pan, Turn back the heat high, Stir fry long chili green peppers and cook for about 30 seconds. Then set aside.
  4. Turn down the heat into medium, then add ginger, garlic and dried peppers. Stir until fragrant, for about 30 seconds.
  5. Next, turn the heat back up to high. Add the pork belly, chili paste, liquid seasoning, sugar, salt and whole peppercorns. Stir fry for about 30 seconds.
  6. Add the long chili green peppers, scallions and shaoxing wine stir fry for another 60 seconds. Remove from heat. Serve Hot.
