Ingredients
1lbpork bellysliced 1/2-inch thick
1tablespoonvegetable oil
8garlic clovessliced thinly
2teaspoonminced ginger
10 long chili green peppersremove the seeds and cut into 1-inch pieces
10 whole dried red chili peppers
1scallioncut into 1-inch pieces
1teaspoonwhole peppercorn or 1/4 teaspoon ground pepper
1tablespoonchili paste
3/4teaspoonsalt
1tablespoonliquid seasoning
1 1/2teaspoonsugar
2tablespoonshaoxing wine
Instructions
Heat oil in a wok or wide pan over high heat.
Add the pork belly and stir fry for few seconds then turn down the heat to medium and cook the pork belly until a bit crispy and browned. Remove from pan and set aside.
In the same pan, Turn back the heat high, Stir fry long chili green peppers and cook for about 30 seconds. Then set aside.
Turn down the heat into medium, then add ginger, garlic and dried peppers. Stir until fragrant, for about 30 seconds.
Next, turn the heat back up to high. Add the pork belly, chili paste, liquid seasoning, sugar, salt and whole peppercorns. Stir fry for about 30 seconds.
Add the long chili green peppers, scallions and shaoxing wine stir fry for another 60 seconds. Remove from heat. Serve Hot.
