Ingredients
- 1 1/2 cups warm water
- 2 tablespoon light brown sugar
- 2 1/4 teaspoons active dry yeast
- 2 tablespoon unsalted butter melted
- 1 teaspoon salt
- 4 1/2 cups all-purpose flour
- Vegetable oil
- 10 cups water
- 1/2 cup baking soda
- 1 whole egg beaten with 1 tablespoon water
- Coarse sea salt
Instructions

In a small bowl, combine warm water and sugar. Sprinkle yeast on top and slightly stir. Allow to sit for 5 minutes until it gets foamy.

Mix together flour and salt in a mixing bowl. Make a well in the center of the flour mixture then add the melted butter, oil and yeast mixture and slowly mix with wooden spoon until combined and starts to form a lump.

Transfer the dough out onto a lightly floured surface. and Knead the for about 3 minutes, then form into a ball.

In a lightly greased bowl, add the dough and lightly coat with oil. Cover with a clean towel or plastic wrap and let it rest in a warm spot for about 1 hour.

After an hour, Turn the dough on a flat surface

and divide the dough into 6 pieces. Roll each piece into a 20-inch long rope and cut each rope into 1.5-inch pretzel bites.

Preheat oven to 425°F (218°C). Line two large baking sheets with parchment paper or silicone baking mats. Set aside.

In a large pot, stir together water and baking soda and bring to boil. Drop the pretzel bites to the boiling baking soda mixture in batches, for about 30 seconds. Remove with a slotted spoon and place onto the oiled baking sheet. Make sure the pretzel bites are not touching.

Brush the top of the pretzel bites with egg wash and sprinkle them with salt.

Place into the oven and bake for about 10-15 minutes or until golden brown.

- If you want a cinnamon sugar pretzel bites, just roll the bites in a melted butter then in a cinnamon sugar mixture.
