How to make easy Black Tapioca Pearls from scratch | Boba Pearls

This soft and chewy tapioca pearls recipe will make you surely enjoy your favorite milk tea or any bubble tea drink.

Ingredients

  • 3/4 cup Tapioca Starch
  • 1/4 cup boiling water
  • 2 tablespoon brown sugar
  • 1/4 teaspoon black food color optional

Cooking Tapioca Boba Pearls

  • 4 cups water for Boiling

Instructions

  1. Add the tapioca starch into a medium bowl.
  2. Mix the 1/4 cup boiling water, food color into a heat-resistant bowl.

  3. Add the hot mixture little by little in the tapioca flour and quickly mix together with spoon. Be careful not to burn yourself.
  4. Once it’s starting to form a ball. Transfer to a flat surface and start to knead the dough until it is smooth. About 1-2 minutes.
  5. Divided the dough into 4 sections, Then roll each into a log and cut
  6. In a medium pot, Boil 4 cups of water over medium heat. Once it has reached boiling point, add the tapioca pearls. Mix gently until the tapioca pearls floats.
  7. Cook the tapioca pearls for 15 minutes then remove from the heat and cover the pot and let it sit for another 5 minutes.
  8. Strain the cooked tapioca pearls and rinse with clean running water.
  9. Place the tapioca pearls into a bowl and add 2 tablespoons of brown sugar and 2 tablespoons of hot water. Mix with the cooked tapioca pearls to keep them from sticking with each other.

Recipe Notes

  • When kneading, Sprinkle a little tapioca starch over your work area to keep the dough from sticking.
  • While rolling the each dough logs and shaping into tapioca pearls, cover the rest with a damp towel or cling wrap to keep the dough from drying.
  • Tapioca pearls are at their best when used right away after cooking themĀ  or
    store them in the refrigerator for up to two days.
