Hamburger Buns

Hamburger Buns

Ingredients

  • 3 1/2 cups bread flour
  • 1/4 cup milk powder
  • 5 tablespoons sugar
  • 3/4 teaspoon salt
  • 1/4 cup butter softened
  • 1 cup warm water
  • 1 tablespoon yeast
  • 1 large egg
  • sesame seeds optional
  • 4 tablespoons melted butter optional

Egg wash

  • 1 egg
  • 1 tablespoon water

Instructions

  1. In a mixing bowl, combine bread flour, milk powder and salt then set aside.
  2. In a small bowl, combine warm water, sugar and sprinkle yeast. Let it sit for 5 minutes until foamy.
  3. Add the yeast mixture, butter and egg to the flour mixture. Mix until it forms a dough. At this point the dough is still sticky.
  4. Transfer dough into a lightly floured surface and knead until it becomes smooth and elastic and not sticky anymore.
  5. Shape dough into bowl and place into a greased bowl. Cover the dough and let it rise until it’s nearly doubled in size, About 1 hour.
  6. Gently deflate the dough, and divide it into 16 pieces for medium buns and 8 pieces for large buns. Shape each piece into a round ball.
  7. Place the dough balls about 2-3 inches apart. Cover the dough balls, and let rise for about an hour.
  8. Preheat oven to 400F, Beat egg and water in a small bowl for egg wash mixture.
  9. When buns have doubled in size, gently brush top of the buns with the egg wash without deflating the risen dough. Sprinkle with sesame seeds on top and bake for 15 minutes until golden brown.
  10. Remove from oven and brush with melted butter.

Recipe Notes

Note:

  • Rotate the baking trays halfway through baking to have an even golden brown color.
  • Store in an airtight container in the freezer for up to one month.
  • If the dough is not yet smooth in first kneading,  just cover and let it rest for 10 minutes then knead again until smooth. Then cover and continue to rise for 1 hour.
  • If you want a softer and lighter brown color on top crust. Brush with melted butter instead of egg wash  mixture.
