Chicken Macaroni Salad

Ingredients
- 400 g salad or elbow macaroni
- 1 lb chicken breast
- 1 cup mayonnaise
- 1/2 cup chicken spread lady’s choice
- 1 cup onions finely chopped
- 1 cup carrots fine dice
- 1 cup pineapple tidbits finely chopped
- 1 cup raisins
- 1/2 cup celery stalk fine dice
- 1/2 cup pickle relish drained
- 1 cup cheese or 1 eden bar small diced
- 1 teaspoon ground pepper
- 1/2 teaspoon salt
Instructions

In a large pot of boiling lightly salted water, cook macaroni as per package instructions. Drain and rinse under cold water then set aside.

In a pot, add the chicken meat with enough water to cover. Let it boil and simmer until meat is cooked through. Drain from the liquid and let it cool down. Shred chicken meat then set aside.

In a large mixing bowl, combine all ingredients and gently stir together until well blended.

Cover the bowl then refrigerate for at least an hour to allow flavors to blend.
